What's Up Wednesday



Happy Wednesday!

Yay for short weeks! Today I'm doing a "What's Up Wednesday" post and linking up with Shay, Sheaffer, and Mel. Here's the low down on mine and Shawn's new life in Texas so far!

What we're eating this week:
I made a ton of this delicious pasta salad today so we'll probably be eating quite a bit of that this week. I modified the recipe a bit. I added rotisserie chicken and used gluten free rotini instead so my hubby could have it. Also on the menu are tacos with this AMAZING meat, fresh pico, shredded cheese and guac. Have y'all tried the McCormick guacamole seasoning packets? Mix that with avocados, minced garlic, salsa, a dash of salt and tiny bit of lime juice and you're golden. Yum!



What I'm reminiscing about:
Our road trip to Canada and Upstate New York. Toronto, Niagara Falls, Palmyra, Cooperstown. Seriously, so much fun! A blog post about the whole trip is coming soon!


What I'm loving:
This amazing hot weather we are having in Dallas. For four years I froze my you-know-what off so now I'm soaking up all the sun I can! I'm not even kidding. Four out of the last five days have been spent at either a pool or a splash pad. I'm starting to remember what it was like to be tan haha!


What we've been up to:
Moving across the country. For those that don't know, my hubby graduated from dental school last week and the next day we started the drive from Boston, MA to Dallas, TX which is about 30 hours. My parents were kind enough to make the drive with us, alternating between driving our Uhaul and our car. Life savers!

 

What I'm dreading:
Nothing at the moment!

What I'm working on:
Getting caught up on customer orders, settling into our "new" home, adjusting to how nice everyone is here, and spoiling my nephews and niece rotten!


What I'm excited about:
We're house hunting! I've discovered that this process is both exciting and daunting! Any advice on house hunting in Texas?

What I'm reading:
"Girl, Wash Your Face" by Rachel Hollis is awesome! If you're wanting a confidence boost, a mental kick in the butt, and some great advice...this is your book. I can't count the number of times I've nodded my head in agreement or shouted amen sister! She's so good at what she does and I totally recommend this book!


What I'm listening to:
I still love The Greatest Showman soundtrack, but I've scaled back a bit just so I don't get burned out on it haha!This is my current playlist and I'm loving it!

What I'm doing this weekend:
Not sure yet. My hubby has Friday off so maybe we'll explore some new areas of Dallas! Any suggestions?

What I'm looking forward to next month:
My family reunion in Utah! I can't wait to see my grandparents and all my cousins that I haven't seen forever!

What else is new:
My hubby started his new job yesterday! He joined a dental practice in the Frisco area. He's so excited to be done with school and working!
